Banana Surprise Muffins


Ingredient List: Preparation Instructions:
 


 1-3/4 Cups flour
1/3 Cup sugar
2 teaspoons baking powder
3/4 teaspoons salt
1/4 teaspoon soda
1 egg, beaten
1/3 cup oil
1 cup mashed ripe bananas
   favorite jellies, marmalades, jams 		Combine first 5 ingredients in a large bowl; make a well in the center.  Add egg, oil and banana, stirring just until moistened. Spoon into greased (or use paper liners) muffin tin, filling 1/3 full.  Spoon 1 teaspoon jelly in center of each muffin cup; spoon remaining batter over jelly. Bake at 400° for 18 - 20 minutes.

Yield: 1 dozen muffins
