Blueberry Muffins



Ingredient List: Preparation Instructions:
 


1 1/2 - 2 Cups fresh blueberries
2 cups all-purpose flour, divided
3/4 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 (3-oz) package cream cheese,
   cut into cubes
2 teaspoons lemon juice
2 teaspoons vanilla extract
1/4 cup butter, melted
1/2 cup milk
2 eggs
Toss blueberries with 2 tablespoons flour; set aside.
Combine remaining flour with dry ingredients; set aside.
In mixer bowl, add cream cheese, lemon juice, and vanilla; mix until smooth. Add melted butter and milk; mix well. Scrape bowl and mix again.  Add eggs and mix well.  Add flour mixture; mix just until moistened.   Fold in blueberries.
Fill paper-lined muffin pans 2/3 full.  Bake at 400 degrees for 18 - 20 minutes.  Remove from pans immediately.

Yield: 16 muffins
