Cranberry Coffee Cake |

1 cup sugar 2 cups flour 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1 egg 1 teaspoon vanilla 2 tablespoons hot water 1/2 cup orange juice 1 cup cranberries, halved 1/2 cup chopped pecans 2 tablespoons butter, melted |
Stir together sugar and next 4 ingredients. Add egg and next 5 ingredients to sugar and flour mixture. Grease loaf pan (or 2 smaller pans or 6 tiny loaf pans). Bake 1 hour at 325 - 350° or until wooden pick inserted in cake(s) come out clean. Remove from oven and let stand 5 minutes. Remove from pan(s) and brush all sides with melted butter. Cool and wrap loaf (or loaves) in clear plastic wrap. |
