2 Tablespoons light olive oil 2 tablespoons butter 1 yellow onion, sliced in 1/4-inch slices 3 cloves garlic, sliced 1 tablespoon fresh oregano, finely chopped 1 tablespoon fresh parsley, finely chopped 1/4 green pepper, julienned 1/4 red pepper, julienned 1/4 yellow pepper, julienned 1/2 pound mushrooms, thickly sliced 1/2 pound shrimp, peeled and deveined 1/2 pound (2 fillets) fresh fish* 1 (12-ounce) package angel hair pasta *Speckled trout, redfish (red drum), Spanish mackerel, flounder, croaker |
Heat olive oil and butter in large Dutch oven. Cook onion and garlic over medium heat until onion and garlic begin to brown. Add herbs to onions and garlic. Increase heat to medium-high. Add mushrooms, fish, and shrimp. Toss gently with onion/garlic mixture. Cook for about 5 minutes, occasionally tossing gently, until shrimp turns pink and fish flakes easily. Cook angel hair pasta according to package instructions. Serve del Mar over hot pasta. |
