Shrimp Pilau

Ingredient List:

     Preparation Instructions:
1-1/2 lbs unpeeled, medium-size shrimp
1/2 cup chopped cooked ham
2 tablespoons vegetable oil
2 garlic cloves, minced
1 large green bell pepper, diced
1 medium onion, diced
1 (14-1/2-ounce) can diced tomatoes
2 cups chicken broth
1 tablespoon Creole seasoning
1-3/4 cups uncooked long-grain rice


  • Peel shrimp; devein, if desired.
  • Saute ham in hot oil in a Dutch oven over medium-high heat 2 minutes or until lightly browned.
  • Add garlic, green pepper, and onion; saute 3 minutes.
  • Stir in tomatoes, broth, and Creole seasoning; cook 5 minutes.
  • Stir in rice; cover, reduce heat, and simmer 20 minutes.
  • Arrange shrimp evenly over rice in Dutch oven; cover and cook 5 minutes.  Remove from heat, and let stand 5 minutes.

Yield: 4 servings
