Stuffed Cabbage Rolls |

1 pound ground sirloin 1 pound lo-fat sausage 1 onion, chopped 1 teaspoon salt 1/2 cup cooked white rice 1 head cabbage 2 cans sauerkraut 1 or 2 eggs, beaten 1/4 cup sliced apples |
Place individual cabbage leaves into a microwavable dish with 1/4 cup water. Cover with microwave paper towel. Microwave until leaves are limp. Set aside to cool for handling. Combine ground sirloin, sausage, onion, salt, and rice. Scoop 2 - 3 tablespoons of meat mixture (whatever fits in the cabbage leaf) and roll up. Prepare baking dish with Pam spray. Place layer of cabbage rolls in dish and cover with sauerkraut. Repeat, finishing with sauerkraut on top. Combine apples and brown sugar. Place on top of cabbage rolls and sauerkraut and sprinkle with a small amount of additional brown sugar. Cover baking dish and bake at 350° for 30 minutes. |
