Stuffed Mushrooms



Ingredient List:

12 large fresh mushrooms (~1 pound)
1/4 cup butter melted
1/2 cup chopped cooked shrimp
1/3 cup Italian-seasoned breadcrumbs
1/4 cup chicken broth
1 teaspoon chopped fresh oregano
1 teaspoon fresh thyme leaves
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
1 tablespoon grated Parmesan cheese

Preparation Instructions:

Remove stems from mushrooms; chop stems.  Brush mushroom caps with butter.  Stir together chopped mushrooms, shrimp, and next 7 ingredients.

Spoon evenly into mushrooms caps, and sprinkle evenly with more cheese, if desired.  Place on a lightly greased rack in a broiler pan.

Bake at 375° for 20 minutes.

 


Yield: 12 mushrooms
